I have the students complete the Chinese Alphabet Book Project at the end of the unit on China. It takes about a week for my middle school kids to complete, and they love it. It gives them the opportunity to show off what they have learned about ancient China in an artistic way, and they may also conduct their own research to learn more about certain topics that the textbook my have only introduced.
