Evaluating a culinary lab is always challenge. This evaluation sheet is an excellent way to score students performance in culinary labs. The chart covers 10 general food preparation skill categories and uses a 5 point grading scale. Students can be scored on an individual basis or as a group--categories allow for both to be scored on the same sheet. The categories can be changed to fit your personal needs. I've also included a description of each evaluation category on the second page so studen

Egg Dissection Lab

Most students don't have or take the time to really analyze the parts of an egg during a normal foods lab. In this lab experience, students will dissect an egg and remove the shell, shell membrane, observe the air cell/pocket, remove part of the chalazae, and separate the egg to analyze the albumen and yolk. This lab is economically efficient enough to be performed in groups as small as two. My students have always enjoyed this hands on experience. Though messy, it makes further egg labs eas

When students are absent for a culinary lab day, this is a great alternative to having them cook if they don't have the time or the resources. You will need to provide your students with the recipe you used in class and have them analyze and then better understand the process of how the recipe is constructed.

This lab was designed so that ALL students participate and practice each measurement method. At the end, each student will produce their own personal edible cookie dough. The way it works: the teacher will set up the stations with necessary tools and ingredients. Field Trip to a Grocery Store and Bank

If you study family finances and healthy foods with your class, have you ever considered taking a field trip to a local grocery store and bank? Both need to be prearranged with the bank and grocery store. The bank is usually happy to plan an hour or two with your students.
