Each year during my Baking & Pastry class, we do a Banana Lab using up all of the overripe bananas we have in our freezer. This document includes recipes and lab evaluations for students to fill out. Recipes included: Banana Cookies, Chocolate Chip Banana Bars, Banana Bread Cookies, Cinnamon Swirl Banana Muffins, Cinnamon Crunch Banana Bread, Soft Banana Snickerdoodles, and Oatmeal Banana Muffins.
