This a bundle of resources relating to the Five French Mother Sauces (Bechamel, Veloute, Espagnole, Tomato, and Hollandaise) In my Sequence I have students complete a Mother Sauces Webquest, then on the next day I demonstrate how to make 6 different sauce in class and students get to taste them! Formative assessment: Random sauce generator: Summative assessment: students will have a Mac & Cheese Cook-off against the rest of the kitchen groups in the class!
The Mac & Cheese Cook-off includes a 3 Day Lesson Sequence, Recipe, Grocery Form, and Resources for a Macaroni & Cheese Cook-Off! If you teach the Five French Mother Sauce in your class, you have got to try this Macaroni & Cheese Cook-Off Lab! Students will compete with the other kitchens in their class to make the best macaroni and cheese starting with a Bechamel sauce! (They also realize how EASY and TASTY it is to make sauces from scratch)! My High School Foods 2 students always love this lab and I've detailed exactly how I do it! This could also be used in Foods and Nutrition, Culinary Arts, or any comprehensive Family and Consumer Sciences Class!
