I love working with bilingual parents. They are the best. Unfortunately, there is a lack of information in Spanish and I find that there is only so much I can say at a meeting to explain what is happening -- and there's only so much parents can absorb at once too. Plus many meetings feel rushed these days as well.
Handouts, which explain what is going on, are really vital. Parents can take them home and review them at their own speed.
The areas included appear below. This packet of handouts is meant not to be handed out all at once, but pages can be carefully chosen for each meeting. For example, if a student's family doesn't understand the referral process, what language dominance means, and the student has an expressive language delay, you can print only those pages.
I've included a Spanish- only PDF version, an English-only PDF version, and a bilingual PDF version with every other page alternating in Spanish and English -- for quick back-to-back printing:

I used parent-friendly terms to describe speech therapy to parents -- this stuff is tough to understand for lots of people. Also, I included a page that discusses the causes of speech impairments and feelings of guilt that parents experience. I've found that lots of parents blame themselves when their children have communication difficulties and I have found that some families benefit from hearing that it was not anyone's fault.
