Description

This worksheet is a simple and effective way to provide an alternative assignment and assessment for distance learning students in the culinary foods lab. Students will watch a video of your choosing based on your lab topic (I love Alton Brown's Good Eats, which has readily available online). Then, they can complete this assessment explaining what they learned in the video and demonstrating their understanding of the essential skills and contents that they would have gotten in the lab setting! I wanted an assignment I can return to repeatedly for distance learning and hybrid model instruction when students aren't able to do the hands on lab, without reinventing the wheel with each topic. And now with this product, you don't have to either!

This product contains both an editable Word doc file as well as a PDF version.

Students will answer:

  • 5 Facts learned about the topic from the video
  • Equipment used
  • Cooking Techniques
  • How they will use this topic in the future
  • A reflection on the video

Feel free to add other questions related to safety, sanitation, or whatever other specifics relate to your topic!

I use this assignment for:

  • Remote Learners to replace a lab (when fully remote)
  • For remote learners in a hybrid model who are not able to cook at home
  • Hybrid students on a remote day to prepare for an upcoming lab
  • Students who are in quarantine and missing in-person labs
  • Students who are in-person but don't feel comfortable participating in the lab setting
  • Leave for a sub if you are out of school (absent/quarantined) and the culinary topics must continue!

...make it work for you! This product comes with both a Word version and a PDF version so you can avoid any formatting issues or edit the questions if you desire!

PS. Wikipedia has a great list of all the episodes of Good Eats that you can browse and then search for the title you need for your lab. I am yet to find a lab topic that doesn't have an associated episode! Of course, you don't have to use Good Eats. Any YouTube video you like would also work with this general assessment. I just love the level that Good Eats brings to our subject!
